    Second bake, croissants only, and only if there is dough.

    Usually empty. This is not a figure of speech.

    Doors shut. Starter gets fed at four.

The starter

One jar of flour and water, fed every day since 2021.

Everything with a crust on it comes off the same starter. It gets fed at four in the afternoon and again at four in the morning, and it is the reason the sourdough tastes the way it does in August and in January. Nothing here is par-baked and nothing arrives frozen.
